That sounds pretty close to the Maple Leaf, except add some old hockey sticks, ski poles and toques. No Mountie uniforms although most of the staff...

Why not just try red and white checkered pattern first? Too simple?

I've been to the Maple Leaf a few times, it isn't exactly Canadian, it's owened by a big English pub company. They have Moosehead and bad poutine....
